Ricotta and roasted red pepper pasta

Enjoy this very refreshing yet spicy and easy to make pasta. Something different from the usual tomato based or creamy pasta. I’m sure you’ll enjoy this simple dish. It’s suitable for vegetarians. However, if you are a strict vegetarian who do not consume garlic, by all means skip the garlic in this recipe.

  • 12 ounces dried boy tie pasta
  • 1/4 cup butter or margarine
  • 1/2 cup ricotta cheese
  • 1/4 cup freshly grated Parmesan cheese (1 ounce)
  • 1 teaspoon minced garlic (2 cloves)
  • 1/4 teaspoon crushed red pepper
  • 1/4 teaspoon salt
  • 3/4 up coarsely chopped fresh basil
  • 1 7-ounce jar roasted red sweet peppers, drained and chopped (2/3 cup)

  • 1/2 cup light dairy sour cream
  • 1.5 teaspoons prepared horseradish
  • 1/2 teaspoon snipped fresh dill
  • 1 pound beef ribeye steak, trimmed and cut into thin bite-size strips
  • 1 small onion, cut into 1/2 inch slices
  • 1/2 teaspoon minced garlic (1 clove)
  • 1 tablespoon cooking oil
  • 4 teaspoons all-purpose flour
