Make a simple and light salad for lunch if you are watching that waistline. Here’s a lovely and colourful salad that you can easily toss up in 20 minutes to serve about 4 persons. Absolutely easy stuff to make!

Ingredients needed:
- 1/3 cup olive oil
- 3 tablespoons rice vinegar
- 2 tablespoons snipped fresh tarragon
- 1 tablespoon finely chopped shallot
- 1/4 teaspoon salt
- Dash of black pepper
- 8 cups fresh baby spinach
- 1 cup cherry tomatoes and/or yellow pear-shape cherry tomatoes, halved or quartered
- 1/4 cup thinly sliced red onion
- 2 ounces blue cheese, crumbled
Cooking method:
- For dressing, combine the olive oil, rice vinegar, tarragon, shallot, salt and pepper in a jar. Cover the jar tightly and shake well.
- Arrange the spinach and tomatoes on a platter. Top it with the red onions and blue cheese.
- Drizzle the salad with the dressing.
