Make a simple and light salad for lunch if you are watching that waistline. Here’s a lovely and colourful salad that you can easily toss up in 20 minutes to serve about 4 persons. Absolutely easy stuff to make!

Ingredients needed:

  • 1/3 cup olive oil
  • 3 tablespoons rice vinegar
  • 2 tablespoons snipped fresh tarragon
  • 1 tablespoon finely chopped shallot
  • 1/4 teaspoon salt
  • Dash of black pepper
  • 8 cups fresh baby spinach
  • 1 cup cherry tomatoes and/or yellow pear-shape cherry tomatoes, halved or quartered
  • 1/4 cup thinly sliced red onion
  • 2 ounces blue cheese, crumbled

Cooking method:

  1. For dressing, combine the olive oil, rice vinegar, tarragon, shallot, salt and pepper in a jar. Cover the jar tightly and shake well.
  2. Arrange the spinach and tomatoes on a platter. Top it with the red onions and blue cheese.
  3. Drizzle the salad with the dressing.
