Here’s a delicious and tempting dessert recipe especially for strawberry lovers – quick strawberry shortcakes. This dessert is really very easy to do, taking up only about 10 minutes of your time. This lovely strawberry shortcake recipe will make 4 good servings. So invite your girlfriends over for an afternoon of girlie talks over a delicious home made dessert!

Ingredients needed:

  • 4 frozen unbaked buttermilk biscuits
  • 1/3 cup strawberry jelly 
  • 1 pint fresh strawberries, sliced
  • 1/2 cup whipping cream
  • 1/3 cup purchased or self made lemon or strawberry curd

 

Cooking method:

  1. Bake the biscuits according to the package’s instructions and set them down to cool.
  2. Meanwhile, in a small saucepan, heat the strawberry jelly until it is just melted.
  3. Place the strawberries in a bowl and add the jelly into the bowl. Toss it gently until they are mixed, and set aside.
  4. In a chilled medium bowl, beat the whipping cream with chilled beaters of an electric mixer on medium speed until soft peaks form (tips curl).
  5. Split the biscuits horizontally and spread the bottoms with the fruit curd, then replace the tops.
  6. Place the biscuits on a serving dessert plate and spoon the strawberry mixture and whipped cream onto them.
