Quick strawberry shortcakes
Filed in: DessertHere’s a delicious and tempting dessert recipe especially for strawberry lovers – quick strawberry shortcakes. This dessert is really very easy to do, taking up only about 10 minutes of your time. This lovely strawberry shortcake recipe will make 4 good servings. So invite your girlfriends over for an afternoon of girlie talks over a delicious home made dessert!

Ingredients needed:
- 4 frozen unbaked buttermilk biscuits
- 1/3 cup strawberry jelly
- 1 pint fresh strawberries, sliced
- 1/2 cup whipping cream
- 1/3 cup purchased or self made lemon or strawberry curd
Cooking method:
- Bake the biscuits according to the package’s instructions and set them down to cool.
- Meanwhile, in a small saucepan, heat the strawberry jelly until it is just melted.
- Place the strawberries in a bowl and add the jelly into the bowl. Toss it gently until they are mixed, and set aside.
- In a chilled medium bowl, beat the whipping cream with chilled beaters of an electric mixer on medium speed until soft peaks form (tips curl).
- Split the biscuits horizontally and spread the bottoms with the fruit curd, then replace the tops.
- Place the biscuits on a serving dessert plate and spoon the strawberry mixture and whipped cream onto them.
