Pumpkin soup is an easy to make and delicious soup that is a great meal starter.  Cooking this soup is rather interesting as it’s best to be cooked with a modern-day Dutch oven.

This rich and creamy pumpkin soup recipe takes 25 minutes to cook and has plenty to serve up to 8 persons.

Ingredients needed:

  • 3 slices bacon, chopped
  • 1 large onion, chopped
  • 29-ounce pumpkin
  • 2 cans (14 ounce) chicken broth
  • 1 cup applesauce
  • 2 teaspoons grated fresh ginger
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 cup dairy sour cream

Cooking method:

  1. In a Dutch oven, cook bacon until they become crisp.
  2. Use a slotted spoon to remove the bacon and reserve 1 tablespoon of the drippings.
  3. Drain bacon well on paper towels and set aside.
  4. In the same Dutch oven, cook the onion in the reserved drippings for about 5 minutes, or until it is tender.
  5. Stir in the pumpkin, chicken broth, applesauce, ginger, salt and pepper.
  6. Stir until it is heated through.
  7. Stir in the sour cream and let it heat through.
  8. Sprinkle each serving with cooked bacon.
