Pumpkin soup is an easy to make and delicious soup that is a great meal starter. Cooking this soup is rather interesting as it’s best to be cooked with a modern-day Dutch oven.
This rich and creamy pumpkin soup recipe takes 25 minutes to cook and has plenty to serve up to 8 persons.

Ingredients needed:
- 3 slices bacon, chopped
- 1 large onion, chopped
- 29-ounce pumpkin
- 2 cans (14 ounce) chicken broth
- 1 cup applesauce
- 2 teaspoons grated fresh ginger
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 cup dairy sour cream
Cooking method:
- In a Dutch oven, cook bacon until they become crisp.
- Use a slotted spoon to remove the bacon and reserve 1 tablespoon of the drippings.
- Drain bacon well on paper towels and set aside.
- In the same Dutch oven, cook the onion in the reserved drippings for about 5 minutes, or until it is tender.
- Stir in the pumpkin, chicken broth, applesauce, ginger, salt and pepper.
- Stir until it is heated through.
- Stir in the sour cream and let it heat through.
- Sprinkle each serving with cooked bacon.
