This mash potato soup makes a great appetizer to start the meal. If you are thinking of a light meal, this soup is filling enough too as it’s made of potatoes.
You only need a mere 15 minutes to make this soup that serves 3. Try it!

Ingredients needed:
- 20 ounce package refrigerated mashed potatoes
- 14 ounce can chicken broth
- 2 green onions, sliced
- 2 ounces Swiss, cheddar, or smoked Gouda cheese, shredded (1/2 cup)
- Dairy sour cream (optional)
Cooking method:
- In a medium saucepan, combine the mashed potatoes, chicken broth and green onions.
- Cook over medium-high heat until the mixture boils.
- Whisk it to make it nearly smooth.
- Add the cheese and whisk until the cheese is melted.
- If desired, serve with sour cream.
