Ingredients needed:

  • 8 lamb loin chops, cut 1 inch thick
  • 2 teaspoons olive oil
  • 1 small onion, thinly sliced
  • 2 cups sliced fresh mushrooms
  • 1 tablespoon balsamic vinegar
  • 1 teaspoon minced garlic (about 2 cloves)
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 teaspoon snipped fresh tarragon or basil, or 1/4 teaspoon dried tarragon or basil, crushed

Cooking method:

  1. Trim fats from the lamb chops. In a large non-stick pan, heat the olive oil over medium heat.
  2. Add in the lamb chops and cook for about 10 minutes, or until medium cook (estimate yourself if you prefer your meat raw, medium or well done). Turn the chops over once.
  3. When this is done, transfer the chops to a serving dish and keep warm.
  4. Using the same pan with the drippings from the chops, stir in the onions. Cook and stir for about 2 minutes.
  5. Add in the mushrooms, balsamic vinegar, garlic, salt and pepper. Cook and stir for 3 to 4 minutes, or until mushrooms are tender.
  6. Add in the tarragon and stir to spread evenly.
  7. Spoon the mushroom mixture over the lamb chops.
