Make a great starter with this easy to make ham and potato stuffed peppers.  Build up that appetite with this light appetiser for more great food to come! The recipe below is good for 4 servings and it’ll only take you a mere 15 minutes to prepare this wonderful dish.

Ingredients needed:

  • 2 green sweet peppers
  • 1 pint potato salad
  • 1 cup diced cooked ham
  • 1/2 cup corn pieces
  • 1 to 2 tablespoons dill pickle relish

Cooking method:

  1. Cut the peppers in half and remove the stems, seeds and membranes.
  2. In a large saucepan, cook the pepper halves in a large amount of boiling water for 3 minutes.
  3. Drain and put the pepper halves in a bowl of ice water to chill.
  4. Meanwhile, stir together the potato salad, ham, corn and pickle relish.
  5. Invert the pepper halves onto paper towels to drain.
  6. Spoon the potato mixture into the pepper halves and serve.
