Try a spicy chicken salad for a change by following this quick to make ginger lime chicken salad. It’s good as a meal on its own, or you can serve it up as an appetizing side dish as a variation from your main course.
This salad recipe needs 25 minutes preparation time and makes 2 servings.

Ingredients needed:
- 1/4 cup light mayonnaise dressing
- 1 tablespoon chopped red onion
- 1 tablespoon lime juice
- 1 teaspoon grated fresh ginger
- 1 small clove garlic, quartered
- 1.5 cups roasted chicken breast cut into bite-size strips
- 1 stalk celery, cut lengthwise into thin ribbons
- 1 tablespoon salted pumpkin seeds or chopped peanuts
Cooking method:
- For dressing, combine the mayonnaise dressing, red onion, lime juice, ginger and garlic in a blender. Cover and blend until onion is finely chopped and the mixture is well combined.
- Place the chicken strips in a medium bowl and pour the dressing over the chicken. Toss to coat.
- Divide the celery between 2 serving plates and top each with the chicken mixture.
- Sprinkle with pumpkin seeds and serve.
