Try a spicy chicken salad for a change by following this quick to make ginger lime chicken salad. It’s good as a meal on its own, or you can serve it up as an appetizing side dish as a variation from your main course.

This salad recipe needs 25 minutes preparation time and makes 2 servings.

Ingredients needed:

  • 1/4 cup light mayonnaise dressing
  • 1 tablespoon chopped red onion
  • 1 tablespoon lime juice
  • 1 teaspoon grated fresh ginger
  • 1 small clove garlic, quartered
  • 1.5 cups roasted chicken breast cut into bite-size strips
  • 1 stalk celery, cut lengthwise into thin ribbons
  • 1 tablespoon salted pumpkin seeds or chopped peanuts

Cooking method:

  1. For dressing, combine the mayonnaise dressing, red onion, lime juice, ginger and garlic in a blender. Cover and blend until onion is finely chopped and the mixture is well combined.
  2. Place the chicken strips in a medium bowl and pour the dressing over the chicken. Toss to coat.
  3. Divide the celery between 2 serving plates and top each with the chicken mixture.
  4. Sprinkle with pumpkin seeds and serve.
