This easy pot roast recipe is a big time-saver for you to dish up and serve up on your family dining table. Just make sure you have the necessary ingredients and this beef pot roast will not fail you on a day that you are running out of time.
This delicious and wonderful pot roast recipe takes only 25 minutes to make and is good for 3 servings.
Ingredients needed:
- 17 ounce package refrigerated cooked beef pot roast with juices
- 1 tablespoon butter or margarine
- 2 tablespoons minced shallots
- 2 tablespoons tarragon vinegar
- 2 cups fresh, pitted fruit cut into wedges (such as peaches and plums)
- Hot cooked apaetzle (optional)
- 1 teaspoon snipped fresh tarragon
Cooking method:
- Remove the meat from the package and reserve the juices.
- In a large pan, melt the butter over medium heat. Add the shallots and cook for 1 minute.
- Add the pot roast and reduce heat. Cover and let it simmer for 10 minutes, or until the pot roast is heated through.
- In a small bowl, stir together the reserved meat juices and tarragon vinegar.
- Pour this mixture over the meat.
- Spoon the fruit on top.
- Cover and let it heat for 2 more minutes.
- When serving, sprinkle with snipped tarragon.
