Here’s a simple and delicious soup that is easily dished up in just about 20 minutes. This recipe will give you about 5 servings, so there’s plenty to go around for second helping if you are cooking for less than 5 pax.

Ingredients needed:
- 20 ounce shredded potatoes
- 14 ounce chicken broth
- 2 cups frozen or fresh corn pieces
- 2 cups milk
- 12 ounces cooked smoked or plain sausage, halved lengthwise and sliced
- 1/3 cup sliced onions
- 1/4 teaspoon black pepper
- Salt and pepper
Cooking method:
- In a saucepan, put in the potatoes, chicken broth and corn.
- Bring the broth to boil and reduce the heat.
- Cover and let it simmer for about 10 minutes, or until the potatoes become tender. Stir occasionally.
- Using a potato masher, mash the potatoes slightly. Stir in the milk, sausage, onions and pepper, and let it heat.
- Finally, season to taste with salt and pepper.
