Here’s a simple and delicious soup that is easily dished up in just about 20 minutes. This recipe will give you about 5 servings, so there’s plenty to go around for second helping if you are cooking for less than 5 pax.

Ingredients needed:

  • 20 ounce shredded potatoes
  • 14 ounce chicken broth
  • 2 cups frozen or fresh corn pieces
  • 2 cups milk
  • 12 ounces cooked smoked or plain sausage, halved lengthwise and sliced
  • 1/3 cup sliced onions
  • 1/4 teaspoon black pepper
  • Salt and pepper

 

Cooking method:

  1. In a saucepan, put in the potatoes, chicken broth and corn.
  2. Bring the broth to boil and reduce the heat.
  3. Cover and let it simmer for about 10 minutes, or until the potatoes become tender. Stir occasionally.
  4. Using a potato masher, mash the potatoes slightly. Stir in the milk, sausage, onions and pepper, and let it heat.
  5. Finally, season to taste with salt and pepper.
