Try out this delicious green and fruity chicken salad and I’m sure your family will love you for this simple yet satisfying salad! It’s definitely something different from the usual vegetable salads and it doesn’t take long to toss this salad together to impress all at the dining table!
This great chicken salad with strawberries recipe will take 30 minutes to put together and makes plenty of servings for 6.

Ingredients needed:
- 3/4 cup all purpose flour
- 4 tablespoons snipped fresh basil
- 1 tablespoon finely shredded lemon peel
- 2 eggs, beaten
- 1 pound skinless, boneless chicken breasts, cut into thin bite-size strips
- 2 tablespoons cooking oil
- 4 cups torn mixed spring salad greens
- 1 head radicchio, torn into bite-size pieces
- 2 cups sliced fresh strawberries
- 1/2 cup bottled balsamic vinaigrette salad dressing
- 6 lettuce leaves
Cooking method:
- In a shallow dish, combine the flour, 2 tablespoons of basil and the lemon peel.
- Place the eggs in another shallow dish.
- Dip the chicken strips into the flour mixture, then into the eggs. and then again into the flour mixture to coat.
- In a 12 inch saucepan, heat the cooking oil over medium-high heat.
- Add in the chicken, cooking and stirring for 6 to 8 minutes, or until chicken is no longer pink. If necessary, reduce heat to medium to prevent overbrowning and add more oil as needed during cooking. Cool slightly.
- Meanwhile, in a large bowl, toss together the greens, radicchio, strawberries and the remaining 2 tablespoons of basil.
- Drizzle the balsamic vinaigrette over the green mixture and toss gently to coat.
- To serve, line the salad bowls with lettuce leaves, add the green mixtures and top with chicken slices.

This is so easy but utterly delicious! We do not have strawberries now because it is winter, but in the summertime, I will make this salad, thanks!!
