Craving for some good fajitas? Why not make your own and see your family feast and enjoy a delicious chicken fajita meal? It’s really easy to make and you can choose to put in other ingredients to spice up this easy to make chicken fajita recipe if you wish so.

This chicken fajita recipe serves 4 and will take 25 minutes to put together.

Ingredients needed:

  • 2 tablespoons cooking oil
  • 1 medium onion, cut into thin wedges
  • 1 teaspoon minced garlic (2 cloves)
  • 2 medium red and/or green peppers, cut into thin bite-sized strips
  • 12 ounces skinless, boneless chicken breasts, cut into thin bite-sized strips
  • 10 3/4 ounce can condensed cream of chicken soup
  • 1/3 cup bottled salsa
  • 8  seven to eight inch flour tortillas, warmed
  • 2 cups shredded lettuce
  • Dairy sour cream, shredded cheddar cheese, and/or thinly sliced green onion (optional)

Cooking method:

Chicken Fajitas:

  1. In a large pan, heat 1 tablespoon of the oil over medium-high heat.
  2. Add in the onion and garlic and stir for 2 minutes.
  3. Add in the sweet peppers and stir for another 1 to 2 minutes, or until the are crisp-tender. Remove them from the pan.
  4. Add in the remaining 1 tablespoon of oil to the pan and put in the chicken. Cook and stir for 3 to 4 minutes, or until chicken is no longer pink.
  5. Return the peppers to the pain and add cream of chicken soup and salsa sauce, stirring until it is heated through.
  6. To serve, divide the chicken mixture evenly among the warmed tortillas and top with lettuce.
  7. If desired, top with sour cream, cheese and/or green onion.
  8. Roll up tortillas.

Warm Tortillas:

  1. Wrap the tortillas in a white microwave-safe paper towels
  2. Microwave them on high power for 15 to 30 seconds, or until tortillas are softened.
  3. Alternatively, wrap the tortillas in foil and heat in a 180 degree Celcius oven for 10 to 15 minutes, or until warmed.
