Want to try a different kind of soup? If you’re serving a family with kids, you may want to skip this since it contains alcohol. But this spicy and tasty beer, cheese and bacon soup makes a great appetizer for a nice, intimate party.

This soup takes 15 minutes to cook and serves up to 8 persons.

Ingredients needed:

  • 1 medium onion, finely chopped
  • 1/2 cup butter or margarine
  • 2/3 cup all-purpose flour
  • 1 teaspoon dry mustard
  • 1 teaspoon paprika
  • 1/8 teaspoon cayenne pepper
  • 4 cups milk
  • 12-ounce can beer
  • 10.5 ounche can condensed chicken broth
  • 3 cups shredded sharp cheddar cheese (12 ounces)
  • 10 slics bacon, crisp-cooked, drained and crumbled

Cooking method:

  1. In a large saucepan, cook the onion in hot butter until tender.
  2. Stir in the flour, dry mustard, paprika and cayenne pepper.
  3. Gradually stir in the milk, beer and chicken broth.
  4. Constantly stir it for 1 more minute and reduce the heat.
  5. Add in the cheese and stir until it becomes smooth.
  6. Stir in the bacon.
  7. Serve warm.
